It all began with a huge love of food and a passion for cooking. A couple of well travelled, ambitious boys put their heads together, made plans and stumbled across a worldly location on the IJdok in Amsterdam. A piece of history suddenly came to life. In the VOC era when trade flourished in the Netherlands, various spices such as pepper, turmeric, ginger and nutmeg originating from India, China and other Asian countries all landed in the port of Amsterdam. The craving for flavours, textures, smells and colours that the boys had experienced for themselves during their wonderful travel adventures became something they wanted to share with everyone. This combined with sustainable entrepreneurship and respect for the planet has come together beautifully to form restaurant NOMAD.

Chef Denisa is a true artist in the kitchen. Not only is her improvisational talent enviable, but also the way she plates the dishes is a feast for the eyes! Her taste buds were hugely developed and stimulated by all the taste sensations she experienced abroad by eating the same food as the locals. She likes to create a beautiful mix of flavours and textures for which she only uses high quality products. She therefore sources and buys all the ingredients himself so that she knows exactly where they come from and has certainty that the products are bred, cultivated, grown and produced in a responsible way. Finally, chef Denisa is doing everything she can to prevent food waste. If that isn’t love then what is?

Not only dinner is a great adventure at NOMAD. Just having a drink at the bar accompanied by delicious snacks is an experience in itself. It’s like entering an ultra hip bar in New York, where the journey continues through the desert and ends up in an atmospheric oasis. Entering the restaurant through the gates of the medina, you will find yourself in a mix of western urban atmosphere combined with oriental influences. The view of the IJ, with the A’DAM tower and the EYE film museum on the horizon, interspersed with passing boats of all kinds and imposing cruise ships is phenomenal. Once evening falls and the lights go on then the view becomes simply enchanting…
